Indian Tea: English Heritage
Although many people today buy tea in bulk from India, believing that tea art is many years old, local craftsmanship has developed relatively recently.
Tea in India began to be grown for sale only in the second half of the 19th century!
According to legend, the sale of tea in bulk was organized by representatives of the East India Company.
When the British came to India, they planted several tea bushes in its flat part, which over time they managed to turn into whole plantations!
Years have passed, and today English manufacturers sell elite weighing tea wholesale and retail worldwide.
The sale of high-end Indian tea in stores is now commonplace. Each buyer can find & laquo; his & raquo; an Indian drink from one of the four major tea producing regions.
Indian tea types
In India, there are three main areas of high-grade tea, which is expensive and rarely sold in pure form: Darzhiling , Nilgiri, Assam .
Most Indian weight tea & ndash; it's mixtures. And only four of its varieties are & laquo; pure & raquo;:
- Darjeeling & ndash; the most expensive luxury hanging tea in the world with a pronounced floral-honey aroma, which is drunk during the day without sugar and milk.
- Assamese & ndash; a rich-tasting tart weight tea often used in morning tea mixes.
- Nilgiri & ndash; weighing tea, which is used in mixtures as a base.
- Sikkim & ndash; delicate and fragrant hanging tea, which appeared on sale relatively recently, and therefore it became profitable to buy it in bulk due to the low cost.
Today, most tea exported in bulk & ndash; these are leaf variants of it. But the Indians themselves prefer to drink granulated, borrowing the tradition of tea drinking from the British. After all, the East India Company left a mark on the culture of this country!
In India, there are four main tea producing areas: Darjeeling, Assam, & laquo; Northern & raquo; In & shy; diya and & laquo; Southern & raquo; India.
B & laquo; Southern & raquo; India (Kamembatore, Koshen, Konur, etc.) grows approximately 200 million kg of tea.
The Darjeeling area grows 10 million kg, the rest (approximately 490 million kg) in Assam and Northern; India (North Indian Tea & ndash; is an Assamese variety).
The differences between northern and southern varieties are especially strong in brewing qualities, in southern varieties the brewing solution is & laquo; light & raquo;, and in this it is similar to Ceylon tea.
Ceylon Tea
Sri LL anka (formerly about. Ceylon), located in the immediate vicinity of the Indian Peninsula, produces tea no less than mainland plantations. A slight reddish coating on a black tea leaf - ranks tea among the best varieties of Ceylon tea.
Ceylon tea is divided into three types, depending on the highlands of growth:
- Highland (grows at an altitude of 1200 meters and above sea level) The proportion of highland is not great, it can be attributed to exquisite varieties from the plantation of Nuvara Elya, as well as from the plantations of Dimbula and Alas;
- Medium height (grows at 600-1200 meters).
Plantations: Dimboola; - Low Mountain (grows up to 600 meters).
Plantations: Ruhuna, Kandy, Mascalia.
The share of alpine is not great, it can be attributed to exquisite varieties from the plantation of Nuvara Elya, as well as from the plantations of Dimbula and Alas.
It is interesting that in Ceylon, known for its famous tea, which is sold by wholesale and retail producers to stores around the world, tea was cultivated only at the end of the nineteenth century.
Locals, unlike Indians, do not actually consume tea, so all grown crops, including elite tea, are exported by producers (usually sold in bulk).
By the way, it was in Ceylon that Thomas Lipton organized the sale of the famous tea called by his own name to everyone!
Chinese tea: types and features
It was in China that tea was first used as a medicine, and only later as a drink. From the Chinese name (& laquo; te & raquo; in southern dialects, & laquo; cha & raquo; in northern and Cantonese) the word & laquo; tea & raquo; in different languages of the world, and the choice of northern or southern pronunciation indicates the prevailing method of delivering tea to this country: respectively, by land or by sea.
China has been a major tea producer since ancient times. It is known that more than 350 species of tea bush were bred in this country, and the number of its varieties has long exceeded 1000!
It's safe to say that Chinese tea & ndash; it is one of the oldest commodities in world trade.
China's share of global exports has steadily increased in recent decades, rising from a few percent in the 1980s to 25% or more of global Production.
According to the Chinese classification, teas are usually divided into six groups depending on the degree of fermentation & ndash; a complex biochemical process, which is the oxidation of cell juice of a tea leaf under the influence of temperature, moisture, sunlight, oxygen and enzymes:
- Green. & nbsp; Weight green Chinese unfermented tea. Produced in 18 tea provinces in China. The process of making it initially consisted of collecting leaves, crushing them and drying them. Over time, it has become more sophisticated.
- White. White Chinese weight tea is slightly fermented. The manufacturer dries it thoroughly in the sun, fire or stove. Elite white tea can be identified by the white villi on the young leaves.
- Yellow. Yellow & ndash; partially fermented - the tea is steamed for a long time, because of which it begins to turn yellow. Today, yellow hanging tea is also sold in bulk, but its batch sizes are smaller than green.
- Oolong tea. This is a semi-fermented weight tea that takes on a red-green hue after brewing.
- Red. Elite red tea is produced by fermentation. During the fermentation process, tea leaves are separated according to their quality, which determines the subsequent taste of the drink.
- Black.
Herbal and floral are produced with the addition of flowers and herbs. Often the basis of the drink is precisely green, less often oolong and red teas.
